The short answer: to season a cast iron skillet, wash and dry it fully, rub a very thin layer of a high-smoke-point oil (grapeseed, canola, or vegetable) over every surface, then wipe it back until the pan looks almost dry. Bake it upside down at 450 to 500 degrees Fahrenheit for one hour with a tray underneath to catch drips, and let it cool in the oven. That is one layer; a new or stripped pan wants three or four cycles. The two mistakes that cause a sticky pan are using too much oil and not baking hot enough or long enough.

What seasoning actually is
Seasoning is not a coating you apply so much as a chemical change you create. When you heat a thin layer of oil on iron past its smoke point, the oil undergoes polymerization: the fat molecules break down and bond into a hard, plastic-like layer that is chemically fused to the metal. Build up several of these layers and you get a smooth, dark, naturally nonstick surface that also protects the iron from rust. It is the same process whether you do it in the oven or on the stovetop.
Two facts follow from this, and they explain almost everything about good technique. First, only oil in direct, thin contact with the iron polymerizes properly — excess oil that pools cannot fully convert and turns sticky instead. Second, the oil must reach past its smoke point for long enough to complete the reaction, which is why temperature and time matter. Get those two right and seasoning is nearly foolproof.

What you need to season a cast iron skillet
The supply list is short:
- A high-smoke-point oil — grapeseed, canola, vegetable, sunflower, or a dedicated cast-iron seasoning oil.
- Lint-free cloths or paper towels for applying and, more importantly, wiping back the oil.
- An oven that reaches 450 to 500 degrees Fahrenheit, and a baking sheet or foil to catch drips.
- Mild dish soap, a scrub brush or non-scratch scrubber, and for a rusty or stripped pan, steel wool or coarse salt.
- Good ventilation — a range hood and an open window, because high-temperature baking of oil produces smoke.
That is genuinely all. You do not need special equipment, and the oil you choose matters far less than the technique, so start with whatever high-smoke-point oil you already have.
Choosing the best oil
Any neutral oil with a high smoke point will build good seasoning. The differences between them are small compared to how you apply them.

Flaxseed oil gets talked up because it dries to a very hard finish, but many people find it flakes off, so a plain high-smoke-point vegetable oil is the safer, cheaper default. Save the olive oil and butter for actual cooking; they are poor seasoning oils.

The oven method for seasoning a cast iron skillet
The oven method gives the most even, durable seasoning and is the one to use for a new pan, a stripped pan, or any full re-season.
- Preheat the oven to 450 to 500 degrees Fahrenheit, and put a baking sheet or a sheet of foil on the bottom rack to catch drips.
- Wash the skillet with warm water and a little mild dish soap, and scrub off any residue. Soap is fine here — the myth that it destroys seasoning applies to old lye-based soaps, not modern dish soap.
- Dry it completely. Towel it, then set it on a burner over low heat for a minute or two to drive off every trace of moisture. Water is the enemy of both seasoning and the bare iron.
- Apply a thin layer of oil to every surface — inside, outside, handle, and bottom — using a cloth or paper towel.
- Wipe it back until it looks almost dry. This is the most important step. Buff off far more oil than feels right, until the pan looks matte rather than glossy. Any visible pooling will turn sticky.
- Bake upside down on the middle rack for one hour. Inverting the pan lets any last excess drip off rather than pool in the cooking surface.
- Cool in the oven. Turn the oven off and let the skillet cool inside gradually, which avoids thermal shock.
- Repeat the cycle two or three more times for a new or stripped pan, building thin layer on thin layer.
Expect some smoke during baking — that is the oil passing its smoke point, exactly what you want — so run the range hood and open a window.
The stovetop method for touch-ups
For routine maintenance after cooking, a quick stovetop seasoning is faster than firing up the oven. After washing and thoroughly drying the pan, set it over medium to medium-high heat, add a few drops of oil, and rub it over the cooking surface with a folded paper towel held in tongs. Wipe it back until nearly dry, then keep heating until the pan just starts to smoke, let it smoke briefly, and turn off the heat. Let it cool. This reinforces the seasoning a little each time and is the habit that gradually turns a decent pan into a slick one. It will not rebuild a stripped pan the way the oven method does, but as ongoing care it is ideal.
Why pans get sticky, and how to fix it
The single most common seasoning failure is a sticky or tacky surface, and the cause is almost always too much oil. If the coat is not wiped back to nearly dry, the excess cannot fully polymerize and instead sets into a gummy, uneven film. The fixes are simple:
- Prevent it by wiping the oil back far more aggressively than seems necessary — the pan should look dry, not greasy — and by baking hot enough (450 to 500 degrees Fahrenheit) for a full hour.
- Fix an already-sticky pan by scrubbing off the tacky layer with a scrubber or steel wool, washing, drying, and re-seasoning with a much thinner coat.
Under-baking causes the same problem, so do not cut the hour short or the temperature low. Thin coats, high heat, full time: that trio prevents nearly every stickiness issue.

Restoring a rusty or neglected cast iron skillet
One of cast iron's best qualities is that it is almost impossible to ruin permanently. A rusty flea-market find or a neglected hand-me-down can be brought back to a smooth cooking surface:
- Scrub off the rust with steel wool or a stiff brush, or scour with coarse salt and a little oil, until you reach clean gray metal. For heavy rust, a soak in a mix of equal parts white vinegar and water loosens it — but check every 30 minutes and do not leave it too long, since vinegar will eventually eat into the iron itself.
- Wash and dry completely, including a spell on a warm burner to drive off all moisture.
- Season from scratch with three or four full oven cycles as above.
The only things that truly kill a cast iron pan are a crack or a warp, usually from severe thermal shock. Short of that, rust and a stripped surface are just a re-seasoning away from fixed.
Everyday care that keeps seasoning strong
Seasoning is not one-and-done; it builds and maintains itself through how you cook and clean. A simple routine keeps a pan improving over time:

The modern dish-soap myth is worth repeating: a little mild soap is fine and will not destroy seasoning. What harms a pan is water left sitting, the dishwasher, and cooking acidic foods like tomato sauce before the seasoning is well established. Once the pan is well seasoned, it shrugs off far more.
Cooking builds better seasoning than baking alone
The final secret is that regular cooking, especially with fats, is what turns a factory or freshly baked finish into a genuinely nonstick one. Every time you sear, fry, or roast in the pan, you add micro-layers of polymerized fat. Start a new pan on forgiving, fatty jobs — bacon, searing meat, frying, cornbread with plenty of oil — and save delicate eggs and acidic sauces until the surface has darkened and slicked up. A pre-seasoned pan out of the box is only lightly coated; a few weeks of cooking with fat is what makes it perform.
