To grow potatoes in pots, plant two to three seed potatoes in a container of at least 10 gallons, starting with 4 to 6 inches of soil, then hill more soil up around the stems as they grow until the pot is nearly full. Keep the mix consistently moist, feed every two to three weeks, place the container in full sun, and harvest when the foliage yellows. Soil mix and drainage

Fill with a light, free-draining medium: a quality potting mix blended roughly half-and-half with compost gives fertility plus drainage. Do not use heavy garden soil in pots — it compacts, holds water and suffocates the tubers. A slightly acidic mix (pH 5.0 to 6.0) also helps suppress scab, the rough skin blemish common in alkaline soils. Adding a handful of perlite improves drainage in bottom-heavy mixes.

Preparing and planting seed potatoes

The hilling method for potatoes in pots

This is the step that separates a good container crop from a disappointing one. Instead of hilling soil into a mound as you would in a bed, you progressively fill the container.

  1. When shoots reach 6 to 8 inches above the soil, add enough mix or compost to bury the lower two-thirds, leaving the top few inches of leaves exposed.
  2. Repeat every couple of weeks as the shoots grow, until the container is filled to within an inch or two of the rim.
  3. Stop hilling once the pot is full, then let the plant grow, flower and eventually die back.

Watering and feeding potatoes in pots

Best varieties for containers and expected yield

Early and second-early varieties suit containers best because they mature faster, size up in a shorter window, and let you turn a pot around for a second crop.

Expect roughly 2 to 5 pounds from a well-managed 10- to 15-gallon container. Yields per pot are lower than ground beds, so run several bags if you want a meaningful harvest.

A second crop and reusing the mix

One advantage of container growing is how easily you can stagger crops.
