Keep out meat, fish, bones, dairy, greasy or oily food, cat and dog waste, diseased or herbicide-treated plant material, perennial weed roots, coal ash, glossy or coated paper, and anything labeled compostable plastic. Each fails for a different reason — some attract rodents, some carry pathogens that a backyard pile is not hot enough to kill, and some, like hay treated with persistent herbicides, survive composting and then damage the garden you spread it on. Almost everything else from a kitchen and yard is fair game.

Which one actually ruins gardens?

Persistent herbicide contamination, and it is the item on this list that most people have never heard of. Herbicides in the pyridine carboxylic acid family — aminopyralid, clopyralid, picloram — are used on pasture and hay fields and pass through composting and through a grazing animal largely intact. Compost made from contaminated hay, straw or manure then stunts and curls tomatoes, beans, potatoes and peas at concentrations too low to detect any other way. Extension programs across the US, including Washington State University and North Carolina State Extension, publish guidance on it specifically because it keeps happening.

The check is a simple bioassay. Mix your finished compost 50:50 with potting soil, plant three pea or bean seeds in that and three in plain potting soil, and grow them for two to three weeks. Cupped, twisted or fern-like new growth on the compost side means contamination, and that compost should not go on a vegetable bed. Does a hot pile change the rules?

For some items, yes. A pile that genuinely reaches and holds 131 to 160°F throughout — turned so the outer material moves to the center — kills most weed seeds and many plant pathogens. The US Composting Council and USDA organic standards use 131°F held for several days with turnings as the benchmark for that, and it is the standard commercial operations work to.

Backyard piles rarely hold it reliably, which is why the conservative list stands for home composting. And it does not change the rules for the items that fail for other reasons: meat and grease still attract rodents at any temperature, persistent herbicides survive heat entirely, and compostable plastics need sustained industrial conditions. Can you compost citrus peel and onion?

Yes. The old advice that citrus and onion kill compost worms or acidify the pile applies to worm bins in quantity, not to a normal compost heap. In an ordinary pile, citrus and onion break down fine and the acidity is buffered by everything else. In a worm bin, keep both to a small share of what you feed, because worms genuinely avoid them and heavy citrus can drive the bedding acidic. Chop peel small either way, since the waxy rind is slow.

Are compostable plastics safe for a home bin?

Mostly not. Products labeled compostable under ASTM D6400 are certified for industrial composting facilities, which hold sustained temperatures far above what a backyard pile reaches, and in a home bin they typically survive intact or fragment. If your municipality collects organics, that is where they belong. In a home pile they are a contaminant. Uncoated paper and cardboard are the exception and compost readily once torn up and wetted.

What about eggshells and avocado pits?

Both are fine to add and both are slow. Eggshells are mostly calcium carbonate and break down over months to years unless crushed to powder; they do not harm anything, they just persist through a cycle or two. Avocado pits and mango stones are the same story on a larger scale. Screen them out of finished compost and put them back into the next pile, or crush eggshells with a rolling pin first if you want them to actually disappear.

Can you compost weeds?

Annual weeds without seed heads, yes, freely. Weeds that have set seed need a pile that genuinely reaches 131°F or above throughout, held for several days, which most home piles do not manage consistently. Perennial weeds that spread from root fragments — bindweed, quackgrass, Bermuda grass — should stay out entirely, because a piece of root that survives is a new infestation delivered straight into your beds. Drown those in water for a few weeks first, or bag them.

Is it safe to compost paper with printed ink?

Newspaper and most office paper are fine — US newspaper ink has been soy or vegetable based for decades and standard printer toner is inert plastic in small amounts. What to avoid is glossy, coated and thermal paper: glossy stock carries a clay or plastic coating, and thermal receipt paper has historically contained bisphenol compounds. Plain paper, brown cardboard and uncoated packing paper are all excellent carbon sources once torn and wetted.
